SPARKS, Nev. (KOLO) - Carolina Kitchen & Barbeque will be featured on Diners, Drive-ins and Dives Friday, November 8 on the Food Network.
"We put Sparks on the map," joked owner Clay Cobb. "There's no other Sparks restaurants at all, everybody else has been in Reno."
That's true, of the eight local places to be highlighted by the show over the years, this is the first one from Sparks. It's a big opportunity that took a lot of work, with production spanning two full days.
"They were long days, you know, 10-12 hours for us," admitted Cobb.
They featured two dishes on the show, including their popular beef brisket, which is imported from Texas.
"We buy the best beef possible; we spend a lot of money on it," added Cobb. "We cook it perfect. We season it with salt, pepper, garlic. So a half-pound plate, we serve it with collared greens and red beans and rice. Cornbread."
Their Wednesday special was also picked for the episode, although Cobb admits they'll probably start selling it every day. It's a twist on a popular finger food: Chicken Wing Nachos.
"We smoke our chicken wings, toss them with dry rub. Moonshine BBQ sauce. Top them with bacon and cheese, tomato and green onion and sour cream," added Cobb. "So it's a smoked wing with like a nacho."
Carolina Kitchen & Barbeque tried to get on the show the first time they came to Reno back in 2010, and Cobb is well aware of the boost it can do for his business.
"We are (ready for it). I've got five smokers so, if I can run all five at night, I'll be happy."
Carolina Kitchen & Barbeque is hosting a pair of watch parties Friday at 5:30 p.m. One is at their location at 950 Glendale Avenue in Sparks, while the other is at Final Draught at 5318 Sparks Boulevard. You can watch the episode when it airs at 9 p.m. on the Food Network, with a repeat showing at midnight.
