Reno woman creates a small business from nothing during a pandemic
RENO, Nev. (KOLO) - Hub Coffee Roasters is not only a spot for coffee, but it’s also a home for Baked By Nicki.
What started as a hobby for Nicki Simon turned into a recipe for a whole new career path.
Simon applied for a job last year, but COVID hit and everything was put on hold, she was even denied unemployment.
“If it wasn’t for the pandemic I would be sitting at a desk, in a warehouse and I hope I would be happy, but I don’t know,” Simon said.
During her free time, she was baking for her friends and family, but the demand for her baked goods increased every day.
“I didn’t have any expectations or intentions like I never thought that I would own a business, it never crossed my mind,” explained Simon.
She said the feedback has been great, but her most popular item is scones. Simon said her kitchen at home could only do so much, so she teamed up with The Hub to get more space and be able to sell her pastries and make larger batches. She kicked off her business during the height of this pandemic.
“You just have to roll with the punches, like nobody knows what is going on, nobody knows what is going to happen tomorrow,” Simon said.
A female-operated business that started in the kitchen and is now on the shelves of area businesses. Simon said with determination the possibilities are endless.
“I have a totally new perspective and appreciation for small business owners and supporting local business,” said Simon.
