Butternut Squash Risotto
Ingredients Needed:

  • 1 Tbs Olive oil
  • 1/2 cup Yellow onion, diced
  • 1 cup Abrorio rice
  • 1/2 cup Butternut Squash, small diced
  • 4 cups Hot chicken stock
  • 1 Tbs Butter
  • 1/4 cup Shredded Parmesan
  • Salt and Pepper to taste


Directions:
1) Sauté onion in olive oil until translucent but not browned.



2) Add rice and stir to coat the grains.



3) Add small ladle of chicken stack and stir.



4) Continue to cook until liquid is absorbed, add more stock and repeat.



5) After 10 min of cooking add butternut squash and continue adding stock in small amounts.



6) Remove from heat and stir in butter and parmesan, season to taste with salt and pepper.
