| Autumn Vegetable Ragout |
Ingredients Needed:

| Directions: 1) Blanch asparagus and pearl onions, separately, in boiling water until barely tender. Remove and shock in ice water to stop cooking. Pat dry with paper towels. Toss lightly with oil, salt, and pepper. 2) Cut tomatoes in quarters. 3) Grill asparagus and onions over high heat until lightly charred. 4) Sauté garlic in small amounts of oil. 5) Add all vegetables and cook briefly. 6) Add chicken stock, reduce by 1/3. 7) Remove from heat, stir in butter until sauce thickens. 8) Season with parsley, salt, and pepper. |
