| Crab, Shrimp, Lobster Stuffing |

| Directions: 1) Squeeze all water from crab. Combine crab juice with wht wine and shallot. Reduce in sauce pan to 1/4 cup. Cool. 2) Strain reduction into mixing bowl and add dry mustard, Worchester sauce, mayo,salt.pepper,green onions and fresh herbs. Mix well 3) Add crab shrimp lobster and panko. Mix and check for seasoning. Chill. Preparation 1 8 oz boneless fresh trout season with salt and pepper dust skin side with flour sear skin in med hot skillet with oil when golden brown flip sear till just cooked through in another pan sear 1 scoop of stuffing till golden brown on both sides place on cooked trout and serve hot |
