LAS VEGAS (AP) - The Bellagio Buffet is making its caviar bar a permanent institution after a few weeks testing out the gourmet offering.
The Las Vegas Sun reports the bar was added to keep up with other Strip buffets, and will be available on Fridays and Saturdays as part of the $37.99 meal price.
Options include black American sturgeon caviar, red flying fish tobiko caviar or salmon roe. Chefs serve the delicacy on blinis and mini-waffles with traditional accompaniments such as chopped egg, red onions and chives.
Assistant buffet chef Frank Ortiz cautions that diners should stick to small bites, even if it is all-you-can-eat.
He says some guests have approached with bowls hoping for servers to fill them up, but Ortiz says chefs like to "respect the integrity of the dish."
