Cleaning Up the Rib Cook-off

SPARKS, Nev. - Cleaning up after everyone at the Nugget's Best in the West Rib Cook-off is no easy task. Janitorial crews work round the clock to make sure Victorian Square stays clean.

"Basically, we work twenty-four hours a day," Brent Johnson, Janitorial Manager for John Ascuaga's Nugget said.

During the cook-off, Johnson's crew will work between twelve to fourteen hour shifts. It's all hands on deck, making sure the garbage doesn't get out of hand.

"We take a lot of pride in it," Johnson said. "We want to make sure everyone has a great time and it starts with cleanliness."

At night, there's a major push to clean. The janitorial crew sweeps up the curbs and streets, even hosing them down if there's barbecue sauce.

They also get extra help from Sparks, adding ten more people to the cleaning staff at night.

"We usually take one area or two areas," Bruce French, a supervisor for the Public Works Department in Sparks said. "And then we bring our trucks, and clean up the whole thing."

Johnson said he also has crews working hard to keep this inside of the Nugget clean as well.

During the cook-off, about 240 cubic yards of trash is collected each night. The Nugget has taken steps to reduce the amount of trash the event produces, by supplying the Rib Village with compostable plates, napkins, and utensils.
