½ cup Steel Cut Oats uncooked

2T Splenda or Agave Nectar

1ea Cinnamon Stick

1¾ cup Water

1ea Egg white

4ea Granny Smith Apple

½ cup Orange Juice

¼ cup Pecans chopped toasted

Pre heat oven to 350 degrees

Add oats, sweetener, cinnamon, a pinch of salt and water to sauce pan and bring to boil. Then cover and reduce heat to a simmer for 25 minutes. Add a little of the cooked oats to the egg whites to temper then mix all together.

Slice tops off of apples and using a melon baller scoop out core and stem. Place into a baking dish.

Divide oats into apples pour orange juice in pan cover and bake for 45 minutes

When done top with pecans or any other favorite oatmeal topping and drizzle with orange juice from the pan.


2oz Roasted butternut squash
2oz Pomegranate Seeds
2oz Quinoa
1oz Sliced almonds
1.5oz Mixed Greens
1oz Citrus Honey Vinaigrette

Toss greens with dressing than place remaining ingredients on top


4ea garlic cloves
1ea shallot
1 1/3 cup orange juice
¾ cup lime juice
½ cup honey
1tsp cumin
1tsp salt
½tsp pepper
1cup olive oil blend
Place all in the blender
