Ahi Poke with cilantro macadamia nut pesto
Makes 12 pieces
4 oz fresh ahi loin, diced ¼"
2 tbl soy
1 tbl sesame oil
1/2 tsp minced ginger
1 tsp minced garlic
1 tbl black sesame seeds
1 tbl sliced chives
Mix all ingredients and chill for 1 hour before serving.
Serve on a sliced cucumber or wonton chip.
Drizzle with cilantro pesto, sprinkle with black sesame seeds and toasted chopped macadamia nuts.
Note: try baking the wonton square rather than frying if you are looking to cut calories.
½ bunch cleaned and dried cilantro
2 cloves peeled garlic
½ cup toasted macadamia nuts
½ cup olive oil
salt and pepper to taste
Combine all ingredients in a blender pitcher and blend until smooth.
Do not overblend or else pesto will get bitter and discolored.
