SPARKS, NV - "It tastes like a biscuit almost, like a really sweet biscuit." That's how Tom Adams of Seven Troughs Distilling describes the company's signature brew, Recession Proof Moonshine. He and his partners Jason Dondero and Troy Sullivan are realizing their dream, opening a distilling company in Sparks. They've spent three years wading through legal red tape. finally opening the doors of their tasting room to the public this month.
As the area's first distillery, they're focused on using suppliers within the state. "We're taking locally grown grains from Winnemucca Farms," says Adams. "We've got corn, wheat & we're mixing that with some malted barley." They mix up the mash in small batches, allowing it to ferment in barrels. Then it's transferred to the still to extract the alcohol. They say they've created their own recipe. Seeking the most authentic distilling methods they could find, the dedicated themselves to research. In the end, their small batch brew is created the same way George Washington did it in the 1700's.
Adams says the flavor is lighter than you'd expect. "The proof is not high," he says. "We're sending it out at 80 proof, so it's standard proof just like any other vodka or rum." In the Seven Troughs Tasting Room they're offering up a number of cocktails that prove its versatility
For every 120 gallons of mash, the distillers only get about 7 gallons worth of finished product. That's partly because they only harvest the best stuff. "The head shot, it's got a really high alcohol content and it usually carries some bitter flavor to it" explains Adams. "We cut that off. We focus on collecting what's called the heart of the run, and pick up the really sweet flavorful spirits out of the middle of that run. And then as the alcohol content begins to taper off we cut that off as well."
Seven Troughs is also focused on being green. Their leftovers go to local farmers who use the head shot to run tractors, while the spent grains become slop for pigs. You can expect to see even more from seven troughs in 2014 as they introduce aged whiskey, which you can sample now in the tasting room. They will also be releasing a rum.
Seven Troughs is located on Watson Way in Sparks. Their tasting room is open Friday through Sunday. They'll also be at Reno's "Buy Local Market" which is happening at the National Automobile Museum the weekend of November 23rd.
