But, if the holiday food baskets were being picked up today Evelyn says she'd only have enough to feed a half dozen families.
This year, she's expecting to help at least four thousand people.
Evelyn says people have been calling her since June to see if they could qualify for assistance.
Already, 866 seniors are on her list but Evelyn has very few volunteers to help.
Evelyn needs at least three hundred half-turkeys and 415 quarter turkeys by then.
Thanks to her home makeover, in May, she has a better way to store them.
The make-over also gave Evelyn more space for a newly re-modeled office, bedroom, kitchen, and living room.
The only thing that's left is building a shrine for her late husband, Leon, who died four years ago.
